My new love...

I haven't gotten her name yet, but she takes such good care of me. :o)

This is my burrito lady.  She knows that I like two eggs on my burrito, that I don't want the spicy paste on it, and that I usually have a bus to catch.  It goes like this.  


First she takes that magic wooden scraper and spreads this thin dough on the surface.  Keep in mind that this flat pan is on a large pot full of coals.  Then comes the eggs as you can see above.


After that is the green onion, cilantro, and other who-knows-whats.  


After she scrapes it off of the pan and folds it in half, then comes the sauces.  This one was actually for Mark so you can see the chili paste on there while she reaches for the mystery brown sauce in the old can.  


With the chunky brown sauce, she spreads it all out for even distribution of the deliciousness.  

Then you get the crunchy, fried, cracker thing that totally makes it.  

Fold it up, chop it in half...

And in it goes into a little baggie for you to take and enjoy.   

All you have to do is drop 4 RMB in the tray.  It's usually 3 RMB, but I spring for the extra egg.  

Yep.  For those of you who remember, that's breakfast for $0.66.
